Muhallabia - a delicious dessert from Middle East!


In this holy month of Ramadan, I have some pleasant memories of a couple of lavish Iftars attended in Dubai a few years back. I particularly remember one of the desserts served along with the dates and coffee to break the day-long fast was Muhallabia, the traditional Middle Eastern Pudding. There are some tastes which left an ever-lasting impression in your mind, and you feel happy and often salivating upon remembering. Muhallabia is one of those for me!
Followed the recipe post by the famous Chef Rakhee Vaswani and made this middle-eastern dessert today in the evening. 
All you need is some milk, rice flour, fine sugar, corn starch and rose water. Mix the sugar and rice flour in milk and boil it over to get required thickness for the pudding. Mixed cornstarch to thicken and added Rosewater for the unique flavour before turning off the heat. Pour into my favourite 'cutting chai glasses' and kept in a refrigerator to set. Prepared some mango puree by mixing corn starch, ready made Alfonso pulp and water over low heat. Left to cool down for a while. Took out the pudding from the refrigerator after it was set properly and piped the puree on top and garnish them with crushed pistachio. 
And your mouth-watering dessert Muhallabia is ready!
