Scotch Eggs: Crispy Sausage-wrapped Boiled Eggs



A descendant of British picnic snacks which is immensely popular till date as a traditional bar snack. The Sundays are always special to me like many others. In my childhood days, the entire family used to get together for a sumptuous breakfast and sometimes over afternoon tea on Sundays. And my Grandmother and Mum used to make some delicious snacks which were somehow influenced by British colonial era. Calcutta (Kolkata) is one of the few cities where you'll still find the colonial hangover in many parts of the cuisine. Recently, came across the recipe for Scotch Eggs on the internet and tried my hands on the recipe this afternoon. Started with boiling some eggs. I prefer yolks to be completely done so boiled them hard. Some prefer yolk to be a bit runny inside the crispy fried scotch eggs, so it's entirely up to your taste and choice. After twelve minutes and followed by an ice-bath, peeled the boiled eggs and kept in a bowl.   Took chicken sausages and minced them thoroughly with some herbs, chopped coriander leaves, mustard sauce, and salt n pepper. Mixed some corn flour in it to make it sticky. Made small balls of the sausage meat and flatten each ball into a circle then fold this round the boiled egg, patching and moulding to ensure the egg was fully and evenly covered. Then kept them in the refrigerator for a while to firm. Meanwhile mixed some pepper and paprika with flour, took out the egg balls and coated them lightly with the flour, then gave egg wash and rolled on a layer of breadcrumbs. Again put them back in the refrigerator for ten minutes. Heated oil in a pan and fry the egg balls till golden brown. And your Scotch Eggs is ready. Sliced in half and served piping hot with Onion rings, Kasundi (Bengali Mustard Sauce)and Mint chutney.
