A comfort food called, Pumpkin Soup

Today I got my hands flavoured (not dirty ;)) with a simple yet delicious dish from North American cuisine, a Pumpkin Soup. 


Another easy recipe which kind of a comfort food for many North American household and a must during Thanksgiving meals. We do not have a regular supply of Butternut Squash so used Desi Kaddu. 
Followed a quick recipe where finely sliced onion was cooked till softened in olive oil and then diced pumpkin was added and cooked till they become golden. Added Chicken Stock that I made by using the ready-made Maggie Chicken Stock Tablet and some creamy milk into the sauce pot and gave it a good boil. Seasoned them with finely chopped fresh thyme, rosemary, salt and pepper and simmered it till everything becomes soft. Pureé it with a hand blender and then again bring it back to boil. After that simmered it for a while and then strained it for a smooth texture. 
For the croutons, I diced a baguette into small pieces and tossed them in olive oil with some dried herbs till they become crunchy.

Voila, your soup is ready, served the warm soup with some finely chopped roasted pine nuts and pecans on top with a sprig of parsley.
