A Super Easy Couscous Salad for Breakfast!
When we say Mediterranean, the first few countries come to our mind is Italy, Greece, Cyprus.
But there is another shoreline of this magnificent region!
The North Africa!
Countries like Morocco, Tunisia, Algeria, Libya with equally rich culinary heritage!
One of staple food from that part of the land is Couscous!
Bought it a few days back from National Dry Fruits, my dear friend Manish Ji arranged a pack for me and today made this super easy salad for breakfast following a recipe from BBC GoodFood.
Soaked the couscous in Vegetable Stock made using the Maggie Stock Cubes till they become fluffy. Diced some Cucumber and Bell pepper and chopped Spring Onion. Added them to the Couscous, fork in some Pesto and crumbled some Feta into the bowl. And sprinkled over some roasted Pine Nuts on top to add the crunch!
Ta-Da!
My Breakfast is ready!
Served alongside a butter Croissant and my favorite Cup of Joe!
